MONS Cheese tasting event with Kevin Palmaccio
We are so excited to share these delicious cheeses with you! In January (sooo long ago) at the San Francisco Fancy Food Show, we were fortunate to sit with Kevin Palmaccio the US Operations for MONS cheeses. We learned more about the MONS program, how each wheel is carefully cared for; how the stewardship from dairy to cheese monger (and you!) is an integral part of their business and then of course we tasted cheese! Please keep in mind, the cheeses themselves are limited (we took 1 of only 150 wheels made) and seasonal (aforementioned cheese is made 1 x a year) and MONS will only sell cheese once it is perfectly aged (we order 6-8 weeks out). We are honored to bring these special cheeses to Whidbey Island.
Our host, US Operations Manager Kevin Palmaccio will be joining you during your tasting via video. Kevin made a career switch early on all for the love of cheese. Starting at his local Whole Foods as a cheese monger he later became a kaasemaker in Amsterdam. In between mongering and cheese making in both the US and Amsterdam, Kevin was also the first American to study at the MONS school in France. Thanks to Kevin for tasting with us and of course to cheese science.
